Serves 4-6

Ingredients:
- 2 leeks, sliced, just the white parts
- 3 tablespoons of olive oil
- 1 sweet potato, peeled and cubed
- 1 bunch of swiss chard, chopped
- 4 celery ribs, sliced
- 1 large tomato, chopped
- 1 cup of chopped kale
- 1 cup of broccoli florets
- 1 cup of cauliflower florets
- Salt and pepper to taste
Instructions:
- In a large pot, add olive oil and leeks
- Cook on medium heat for 15 minutes allowing leeks to caramelize, adding a bit of water if necessary to avoid leeks drying out or burning
- Add tomato and let reduce by half
- Add everything else and cover with water
- Salt and pepper to taste
- Cook soup, covered, for 20 minutes
