Hearty Fall Minestrone Soup

Serves 4-6
Prep time 15 minutes
Cook time 35 minutes

Ingredients:

  • 2 leeks, sliced, just the white parts
  • 3 tablespoons of olive oil
  • 1 sweet potato, peeled and cubed
  • 1 bunch of swiss chard, chopped
  • 4 celery ribs, sliced
  • 1 large tomato, chopped
  • 1 cup of chopped kale
  • 1 cup of broccoli florets
  • 1 cup of cauliflower florets
  • Salt and pepper to taste

Instructions:

  1. In a large pot, add olive oil and leeks
  2. Cook on medium heat for 15 minutes allowing leeks to caramelize, adding a bit of water if necessary to avoid leeks drying out or burning
  3. Add tomato and let reduce by half
  4. Add everything else and cover with water
  5. Salt and pepper to taste
  6. Cook soup, covered, for 20 minutes
