Ingredients:
- 1 bag of baby spinach
- 1 cup of romaine lettuce, chopped
- 4 ribs of celery, sliced thinly
- 1/2 pound of salmon
- 1/2 cup of walnuts
- 1/2 cup of unsalted organic sunflower seeds
Dressing:
- 3 tablespoons of fantastic extra virgin olive oil
- 1.5 tablespoons of apple cider vinegar
- Salt and pepper to taste
Instructions:
- Lay salmon filets skin side down on a parchment lined baking sheet, salt and pepper to taste
- Bake 10 minutes or until cooked through
- When cooled, flake with a fork
- After salmon is cooked, mix everything in a bowl and dress
