Celery and Walnut Flaky Salmon Salad

Serves 4

Cook time 10 minutes

Ingredients: 

  • 1 bag of baby spinach
  • 1 cup of romaine lettuce, chopped
  • 4 ribs of celery, sliced thinly
  • 1/2 pound of salmon
  • 1/2 cup of walnuts
  • 1/2 cup of unsalted organic sunflower seeds

Dressing:

  • 3 tablespoons of fantastic extra virgin olive oil
  • 1.5 tablespoons of apple cider vinegar
  • Salt and pepper to taste

Instructions:

  1. Lay salmon filets skin side down on a parchment lined baking sheet, salt and pepper to taste
  2. Bake 10 minutes or until cooked through
  3. When cooled, flake with a fork
  4. After salmon is cooked, mix everything in a bowl and dress
