Eggs al Pomodoro

Eggs al Pomodoro

Serves 4

Cook time 5 minutes

Ingredients:

  • 1 jar of Rao’s tomato sauce
  • 10 basil leaves, torn into pieces
  • 8 eggs
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper to taste

Instructions: 

  1. In a nonstick pan add tomato sauce and olive oil and heat on low until simmering
  2. Gently crack eggs into tomato sauce, try to avoid breaking the yolk
  3. Cover and cook until eggs are cooked to your liking
  4. Salt and pepper to taste
  5. Add basil and serve
