Fig and Rosemary Glazed Ribs

Fig and Rosemary Glazed Ribs

Serves 4
Prep time 30 minutes
Cook time 3 hours

Ingredients:

Meat:

  • 2 racks of pork ribs

Instructions:

  1. Pre heat oven to 300
  2. Rub ribs with spice rub (see below) and wrap them in tin foil
  3. Place in oven for 2 hours
  4. Take tin foiled wrapped ribs out of oven and open tin foil
  5. Brush ribs with bbq sauce (see below)
  6. Lay flat tin foil with ribs on a baking sheet and put back in the oven for 1 more hour

Ingredients:

Spice rub:

  • 1 tablespoon of cinnamon
  • 2 tablespoons of chili powder
  • 2 tablespoons of salt
  • 2 tablespoons of cracked pepper
  • 1 tablespoon of cayenne pepper
  • 1 tablespoon of ground ginger
  • 1 tablespoon of smoked paprika
  • 1 tablespoon of maple syrup

Instructions:

  1. Mix everything together and use for rib rub

Ingredients:

Bbq sauce:
  • 1 garlic clove, minced
  • 3 sprigs of fresh rosemary
  • 1/4 cup of olive oil
  • 2 onions, sliced
  • 2 pounds of fresh figs, sliced in half
  • 1/2 cup balsamic vinegar
  • 1 jalapeno sliced

Instructions:

  1. Spoon fig fruit out of skin, discard skin
  2. In a medium pot add olive oil and minced garlic
  3. Cook on low heat until garlic is golden, but not burned
  4. Add onion, rosemary and jalapeño and let cook down about 10 minutes or until it starts to caramelize
  5. Add balsamic and figs and cook down on low heat until mixture thickens and starts to caramelize
  6. Blend bbq sauce and let cool
