Ingredients:
Chia pudding:
- 8 tablespoons of chia seeds
- 1/2 cup of coconut or almond milk
- 1 teaspoons of honey
Instructions:
- Mix all together well, place in glasses or a mason jar and let chill in fridge for at least 2 hours.
- Top with fig compote (see below).
Ingredients:
Fig compote:
- 1/2 pound of fresh figs, sliced in half
- 1 cinnamon stick
- 1 teaspoon of vanilla
- 4 tablespoons of water
Instructions:
- Spoon the inside of the figs out of the skin and place in a small pot with cinnamon, vanilla and water. Simmer on low heat until mixture starts to caramelise, about 10 minutes.
- Let cool and use as a topping for chia pudding.
