Chia Pudding with Fig Compote

Ingredients:
Chia pudding:

  • 8 tablespoons of chia seeds
  • 1/2 cup of coconut or almond milk
  • 1 teaspoons of honey

Instructions:

  1. Mix all together well, place in glasses or a mason jar and let chill in fridge for at least 2 hours.
  2. Top with fig compote (see below).

Ingredients:
Fig compote:

  • 1/2 pound of fresh figs, sliced in half
  • 1 cinnamon stick
  • 1 teaspoon of vanilla
  • 4 tablespoons of water

Instructions:

  1. Spoon the inside of the figs out of the skin and place in a small pot with cinnamon, vanilla and water. Simmer on low heat until mixture starts to caramelise, about 10 minutes.
  2. Let cool and use as a topping for chia pudding.
