BREAKFAST TACOS

1 serving

1 teaspoon olive or avocado oil

½ pepper, chopped- about ½ cup

¼ onion, chopped- about ¼ cup

2 sausage links, sliced

3 eggs, whisked

2-3 bibb or butter lettuce leaves

1/4 avocado, sliced

1 teaspoon hot Sauce, optional

 Warm the oil in a pan over medium heat. Add the onions, peppers, and sausage. Cook until vegetables are tender and sausage is cooked through for about 6 minutes. Then add whisked eggs to the pan and season with salt and pepper. Scramble until the eggs are cooked to your liking.

To assemble the tacos, place the bib lettuce onto a

plate and evenly divide the scrambled and top off with hot sauce and avocado Enjoy!

NOTES

  • Best enjoyed immediately but can refrigerate the eggs mixture separate from lettuce wraps each in an airtight container for up to three days.
  • Can also top with any microgreens, sprouts, baby spinach, or arugula
