Balsamic Roasted Veggies

Serves 2-4


½ lb. brussel sprouts, sliced lengthwise

½ lb. asparagus, ends trimmed and cut in half

1 bag pre-cut broccoli florets

3 tbsp. balsamic vinegar

½ tsp. garlic powder

1 tbsp. avocado oil

Salt and pepper to taste


Preheat oven to 450 degrees, and line a baking sheet with parchment paper and set aside.

In a mixing bowl, add all vegetables and all remaining ingredients and toss until veggies are nicely coated. Spread out the veggies evenly onto the baking sheet and bake until golden brown for about 15 minutes. Want them crispy? Broil on high
