Avocado Egg Salad

Serves 2-3


4 whole eggs, boiled and peeled 

1 medium sized avocado, diced

¼ C diced red onion

½ lemon, juiced 

2 tbsp. Freshly chopped parsley 

½ tsp salt

¼ tsp ground black pepper 

Pinch of smoked paprika, optional 


In a medium sized bowl, add peeled hard boiled eggs and mash each one with a fork until its in smaller pieces. Add all remaining ingredients and mix until well combined. Put the salad on top of a bed of mixed greens, a piece of ezekiel toast, or eat it with crudite!
