Serves 6-8
Ingredients for the salad:
4 C cole slaw mix(green and purple cabbage with shredded carrots mixed in)
1 C red cabbage, shredded
1 C shredded rotisserie chicken
¼ c toasted sliced almonds
1 C broccoli florets, roughly chopped
2 green onions, thinly sliced
1 red bell pepper sliced, (optional)
For the dressing:
¼ c coconut aminos
2 tbsp rice vinegar
1 tbsp avocado oil
1 tbsp toasted sesame oil
1 tbsp minced garlic
2 tbsp smooth almond butter
Pinch of red pepper flakes
Instructions:
For the salad, place all ingredients into a large bowl and toss to combine.
For the dressing, combine all ingredients into a bowl and whisk together until smooth. If dressing is too thick, thin it out with 1 tsp filtered water at a time. Taste and adjust seasonings as desired.
