Ingredients:
2 1/2 cups of almond flour
1/2 cup of tapioca flour
1 tsp of baking soda
1/4 teaspoon of salt
1/4 teaspoon ground ginger
1/4 teaspoon cinnamon
3 eggs
1/4 cup maple syrup
1/4 cup coconut oil
1 tsp orange zest
1 cup of grated carrots
1 grated apple
1/2 cup rasins (optional)
1/2 cup of chopped nuts
1 cup coconut milk
Instructions:
- Heat oven to 350
- Line muffin pan w parchment liners
- Mix together dry ingredients: almond flour, tapioca flour, baking soda, cinnamon, ginger, salt, orange zest, raisins and nuts
- Whisk together wet ingredients: eggs, maple syrup, coconut oil, coconut milk until smooth
- Fold apple and carrots in to wet ingredients and add dry ingredients
- Fill muffin pan with mixture
- Bake for 20 minutes
