Ingredients:
1 onion, chopped finely
1 cup of full fat coconut milk
1 clove of garlic, chopped finely
2 teaspoons of tapioca flour
4 tablespoons of grated vegan Parmesan
12 oz of fresh spinach
4 tablespoons of olive oil
2 teaspoons of nutmeg
Salt and pepper
Instructions:
- Sauté onion in a medium pot in 4 tablespoons of olive oil
- When onion is cooked, add garlic stirring constantly until slightly golden. Add a bit of water to stop garlic from burning (about 1 tablespoon)
- Add flour and stir until golden
- Add coconut cream and let reduce on medium heat, stirring constantly until smooth
- Add nutmeg, salt and pepper
- Add spinach
- Add vegan parmesan
- You can either serve your spinach like that OR you can add a bit more parmesan on broil it in the oven until golden on top
