Dairy Free Creamed Spinach

Dairy Free Creamed Spinach

Serves 5

Cook Time 15 minutes

Ingredients:
1 onion, chopped finely
1 cup of full fat coconut milk
1 clove of garlic, chopped finely
2 teaspoons of tapioca flour
4 tablespoons of grated vegan Parmesan
12 oz of fresh spinach
4 tablespoons of olive oil
2 teaspoons of nutmeg
Salt and pepper

Instructions:

  • Sauté onion in a medium pot in 4 tablespoons of olive oil
  • When onion is cooked, add garlic stirring constantly until slightly golden. Add a bit of water to stop garlic from burning (about 1 tablespoon)
  • Add flour and stir until golden
  • Add coconut cream and let reduce on medium heat, stirring constantly until smooth
  • Add nutmeg, salt and pepper
  • Add spinach
  • Add vegan parmesan
  • You can either serve your spinach like that OR you can add a bit more parmesan on broil it in the oven until golden on top
