Ingredients:
- 2 tablespoons of extra virgin olive oil
- 1.5 pounds of organic ground turkey
- 1 onion, sliced
- 2 sweet bell peppers, sliced lengthwise
- 2 zucchini, sliced into ribbons or cubed
- 1/4 cup of fresh basil
- 1 tablespoon of minced garlic
- 1 tablespoon of sliced ginger
- 1 teaspoons of red chili flakes
- 2 tablespoons of organic thai green curry paste
- 2 tablespoons of coconut cream
- Salt and pepper to taste
Instructions:
- Heat skillet on high
- Add olive oil, garlic and ginger and cook until slightly golden
- Add turkey and let brown, breaking it up as it cooks, about 2 minutes
- Add in vegetables, curry paste and coconut cream
- Cook another 5 minutes until everything is cooked through
- Add basil
- Taste for salt and pepper and curry, add if necessary
