Thai Turkey and Sweet Pepper Skillet

Cook time 15 minutes

Ingredients:

  • 2 tablespoons of extra virgin olive oil
  • 1.5 pounds of organic ground turkey
  • 1 onion, sliced
  • 2 sweet bell peppers, sliced lengthwise
  • 2 zucchini, sliced into ribbons or cubed
  • 1/4 cup of fresh basil
  • 1 tablespoon of minced garlic
  • 1 tablespoon of sliced ginger
  • 1 teaspoons of red chili flakes
  • 2 tablespoons of organic thai green curry paste
  • 2 tablespoons of coconut cream
  • Salt and pepper to taste

Instructions:

  1. Heat skillet on high
  2. Add olive oil, garlic and ginger and cook until slightly golden
  3. Add turkey and let brown, breaking it up as it cooks, about 2 minutes
  4. Add in vegetables, curry paste and coconut cream
  5. Cook another 5 minutes until everything is cooked through
  6. Add basil
  7. Taste for salt and pepper and curry, add if necessary
