Summer Ceviche

Summer Ceviche

Serves 3
Prep time 20 minutes

*ceviche is all about the quality of the ingredients and the temperature served. Must be served cold 

Ingredients:

  • 1 pound of sashimi grade sea bass, skinless
  • 1/4 a cup of fresh lime juice  
  • 3 tablespoons of red onions, thinly sliced  
  • 4 thin slices of jalapeño
  • 3 tablespoons of cilantro, chopped 
  • 4 tablespoons of fantastic extra virgin olive oil 
  • Salt and pepper, to taste
  • 1 avocado, cubed 
  • 2 cucumbers
  • 2 cups of ice cubes 

Instructions:

  1. Slice cucumbers thinly 
  2. Mix together cucumbers, onions, cilantro, avocado, jalapeño and olive oil in a bowl
  3. Cut fish into strips and then cube into bite sized pieces, put the fish on ice
  4. When ready to serve, take fish off of ice, dry off if necessary 
  5. Place fish in bowl and add lime juice 
  6. Wait 5 minutes and then add fish to bowl of mixed ingredients
  7. Salt and pepper, to taste
  8. Serve immediately
