Spicy Stewed Chickpeas and Swiss Chard

Spicy Stewed Chickpeas and Swiss Chard

Serves 4

Prep time 5 minutes

Cook time 25 minutes

Ingredients:

  • 2 bunches of swiss chard, washed
  • 2 (15 oz) cans of chickpeas, strained 
  • 4 cloves of garlic, crushed
  • 2 sprigs of sage, fresh 
  • 1 medium spiced chili pepper, sliced (optional) 
  • 2 tablespoons of tomato concentrate
  • 4 tablespoons of olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large pot, add olive oil, garlic cloves and sage 
  2. Let cook on medium heat, allowing garlic, sage and chili pepper to flavor oil, about 5 minutes
  3. Add tomato concentrate and 1/2 a cup of water
  4. Stir concentrate into oil and water until dissolved 
  5. Add Swiss chard and cover
  6. Let cook down 10 minutes or until wilted
  7. Add chickpeas, salt and pepper to taste and turn heat up to high
  8. Allow liquid to reduce until dish is creamy and not watery
