Smashed Brussels Sprouts with Vegan Parmesan

Cook time 10 minutes

Ingredients:
10 brussels sprouts (about 1 pound)
1/2 cup grated vegan Parmesan
Extra virgin olive oil
Salt
Pepper

Instructions:

  • Boil brussels sprouts in salted boiling water until tender, and you can stick in a fork easily. About 5 minutes.
  • On a tray lined with parchment paper, lay down brussel sprouts, and one by one, smash them with the bottom of a cup until flat.
  • Brush with olive oil and salt lightly.
  • Sprinkle about a teaspoon of Parmesan on each individual sprout.
  • Broil in oven for about 5 minutes or until golden and crispy.
If you are making this ahead of time, add parmesan and broil right before serving.
