Smashed Brussels Sprouts

Serves 4
Prep time 5 minutes
Cook time 10 minutes

Ingredients:
10 brussels sprouts (about 1 pound)
1/2 cup grated grass fed parmesan *for vegan option, use Violife vegan parmesan
Extra virgin olive oil
Salt
Pepper

Instructions:

  • Boil brussels sprouts in salted boiling water until tender, about 5 minutes.
  • On a tray lined with parchment paper, lay down brussel sprouts, and one by one, smash them with the bottom of a cup until flat.
  • Brush with olive oil and salt lightly.
  • Sprinkle a teaspoon of Parmesan on each individual sprout.
  • Broil in oven for 5 minutes or until golden and crispy.

If you are making this ahead of time, add parmesan and broil right before serving.
