Ingredients:
- 3 pounds of deboned pork shoulder
- 3 ribs of celery, chopped
- 3 carrots, chopped
- 3 large onions, chopped
- 1 cup of dry white wine
- 2 tablespoons of tomato paste
- 4 tablespoons of olive oil
- 2 tablespoons of cumin seeds
Instructions:
- In skillet, on medium heat, sear pork on all sides
- Salt and pepper
- Put in slow cooker
- In the same skillet, sauté chopped veggies in 2 tablespoons of olive oil until cooked through (about 10 minutes)
- Add salt, pepper and cumin seeds
- Put in slow cooker
- Add tomato paste
- Turn slow cooker on high, cover and cook for 8 hours
- When pork is tender and falling apart, place pork on a cutting board and pull meat with 2 forks
- Mix with sauce and serve!
- You can also serve with a tortilla or a lettuce wrap
