Slow Cooker Pulled Pork Carnitas

Serves 6

Cook time 8 hours

Ingredients:

  • 3 pounds of deboned pork shoulder
  • 3 ribs of celery, chopped
  • 3 carrots, chopped
  • 3 large onions, chopped
  • 1 cup of dry white wine
  • 2 tablespoons of tomato paste
  • 4 tablespoons of olive oil
  • 2 tablespoons of cumin seeds

 

Instructions:

  1. In skillet, on medium heat, sear pork on all sides
  2. Salt and pepper
  3. Put in slow cooker
  4. In the same skillet, sauté chopped veggies in 2 tablespoons of olive oil until cooked through (about 10 minutes)
  5. Add salt, pepper and cumin seeds
  6. Put in slow cooker
  7. Add tomato paste
  8. Turn slow cooker on high, cover and cook for 8 hours
  9. When pork is tender and falling apart, place pork on a cutting board and pull meat with 2 forks
  10. Mix with sauce and serve!
  11. You can also serve with a tortilla or a lettuce wrap
