A super simple and satisfying salad to make when you don't know what to do with all the zucchini in your CSA box. I love to top with rotisserie chicken or a piece of grilled salmon and call it a light summertime dinner.
Shredded Zucchini Salad
SERVES ONE
INGREDIENTS:
1 medium zucchini
2 tsp. extra virgin olive oil
pinch fine sea salt
3-4 grinds fresh black pepper
1-2 Tbs. toasted, unsalted sunflower seeds (or pumpkin seeds)
Optional: 1-ounce raw goat cheddar, grated (or crumbled fresh goat's cheese)
DIRECTIONS:

Shred zucchini using the largest holes of a box grater. Toss with olive oil, salt, pepper, and sunflower seeds.

Transfer to a bowl, top with grated cheese, and dig in!

TIP: Don't let this salad sit for too long or it will start to get watery.
