Sausage and Dill Egg Cups

Serves 6, makes 12
Prep time 5 minutes
Cook time 10 minutes

Ingredients:

  • Avocado cooking spray oil
  • 12 eggs
  • 4 small Applegate turkey sausage breakfast links, sliced
  • 4 sprigs of dill, off the stem, chopped

Instructions:

  1. Preheat oven to 350
  2. Spray muffin tins with avocado cooking spray
  3. In a large bowl, whisk eggs well
  4. Fill muffin tins half way up with scrambled eggs
  5. Distribute sausage slices and dill evenly amongst tins
  6. Bake for 10 minutes
  7. *Keep in an airtight container for up to 4 days
