Marinated Chicken Kabobs with Apricots

Ingredients:

  • 8 skinless, boneless, pounded chicken thighs
  • 2 cups of dairy free greek yogurt
  • 1 teaspoon of cinnamon
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne pepper
  • 1 teaspoon of coriander
  • 2 teaspoons of cumin
  • 2 tablespoons of minced garlic
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 1 juice of one lemon
  • 1/4 cup of extra virgin olive oil
  • 8 fresh apricots, sliced in half

Instructions:

  1. In a bowl mix everything with chicken and let marinate for at least 1 hour.
  2. Weave chicken thighs on a skewer, (one thigh per skewer). pushing down as you do, to ensure that the chicken is tightly weaved and not loose.
  3. Add a half of apricot to the top and bottom of skewer.
  4. Grill on medium heat until cooked through (about 10 minutes), or cook in preheated oven at 400 for 15 minutes.
