Ingredients:
- 8 skinless, boneless, pounded chicken thighs
- 2 cups of dairy free greek yogurt
- 1 teaspoon of cinnamon
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- 1 teaspoon of coriander
- 2 teaspoons of cumin
- 2 tablespoons of minced garlic
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 juice of one lemon
- 1/4 cup of extra virgin olive oil
- 8 fresh apricots, sliced in half
Instructions:
- In a bowl mix everything with chicken and let marinate for at least 1 hour.
- Weave chicken thighs on a skewer, (one thigh per skewer). pushing down as you do, to ensure that the chicken is tightly weaved and not loose.
- Add a half of apricot to the top and bottom of skewer.
- Grill on medium heat until cooked through (about 10 minutes), or cook in preheated oven at 400 for 15 minutes.
