We love salmon for its quality protein and high levels of omega-3 fatty acids to help fight inflammation. Always look for wild-caught salmon and not farm-raised.
Maple Dijon Salmon
SERVES TWO (EASILY DOUBLED)
INGREDIENTS:
1 lb wild-caught salmon
drizzle extra virgin olive oil
fine sea salt + black pepper, to taste
1-2 Tbs. dijon mustard
1 Tbs. pure maple syrup
DIRECTIONS:

Cut salmon in 2 even-sized pieces and place on a parchment-lined baking sheet.

Season with salt and pepper + drizzle olive oil.

Whisk together Dijon mustard and maple syrup in a small bowl, then pour over the salmon and let marinate for 5-10 minutes. (Start with one tablespoon mustard and add more to taste.)

Roast salmon for 10-12 minutes or until the flesh flakes easily with a fork. Keep an eye on the salmon while cooking – a thin piece may take only 8-9 minutes to be finished.
