Serves 2-4
Ingredients:
½ -1 small seedless watermelon, cut into 2 inch cubes
2 limes, juiced
1 lime, zested
1 tbsp Fresh mint, chopped
1 tbsp Jennifer Fisher spicy salt
Instructions:
Heat grill to high heat. Place 3-4 cubes of watermelon on small skewers and assemble evenly on a plate or cutting board. Pour lime juice evenly on top of all the watermelon, and some of the spicy salt. Cook watermelon for 1 minute on one side until grill marks form. Remove from the heat and sprinkle each skewer with lime zest, chopped mint, and extra salt.
