Ingredients:
- 2 cups of almond flour
- 5 tablespoon of tapioca flour
- 2 tablespoons of maple syrup
- 1 teaspoon of baking powder
- A pinch of salt
- 1 cup of blueberries
- 1 1/4 cup of coconut milk
- 2 tablespoons of coconut oil
- 2 eggs
- Coconut cooking spray
Instructions:
- Preheat oven to 350 degrees F
- In a medium mixing bowl add all ingredients, except blueberries, and mix well until smooth
- Add blueberries and mix a bit more
- Spray muffin tins with coconut cooking spray
- Spoon a bit of mixture into each tin until they are filled about 1/2 way up
- Bake in the oven for 20 minutes or until cooked through
