Gluten Free Blueberry Muffins

Gluten Free Blueberry Muffins

Serves 6

Prep time 10 minutes

Cook time 30 minutes

Ingredients:

  • 2 cups of almond flour 
  • 5 tablespoon of tapioca flour 
  • 2 tablespoons of maple syrup
  • 1 teaspoon of baking powder 
  • A pinch of salt 
  • 1 cup of blueberries 
  • 1 1/4 cup of coconut milk 
  • 2 tablespoons of coconut oil 
  • 2 eggs
  • Coconut cooking spray 

Instructions:

  1. Preheat oven to 350 degrees F
  2. In a medium mixing bowl add all ingredients, except blueberries, and mix well until smooth
  3. Add blueberries and mix a bit more 
  4. Spray muffin tins with coconut cooking spray
  5. Spoon a bit of mixture into each tin until they are filled about 1/2 way up 
  6. Bake in the oven for 20 minutes or until cooked through
