We all need a treat every now and again — okay, maybe most days.
This recipe is perfect for keeping in your freezer when a sweet tooth hits. There’s zero to very little sugar depending on the chocolate used and plenty of healthy fats to keep your blood sugar levels stable.
My kids even love it.
Frozen Chocolate Yogurt Bark
MAKES 12 SERVINGS
INGREDIENTS:
1/2 cup coconut yogurt
1/2 cup almond butter
1 tsp. vanilla extract
4 ounces 70%+ dark chocolate
flakey sea salt (such as Maldon)
DIRECTIONS:
-
Mix together coconut yogurt, almond butter, and vanilla extract. Spread in a 1/4-inch layer onto a parchment-lined baking sheet (one that fits into your freezer). Place into the freezer while you melt the chocolate.
-
Melt chocolate in the microwave in 30-second intervals, stirring in between. (It usually takes me 3 rounds.) Pour melted chocolate over chilled yogurt base and top with flakey sea salt. You will need to work quickly as the chocolate hardens fast. Return to the freezer and let harden for 2-3 hours before cutting into squares.
-
Store in freezer in an airtight container for 2 months
