INGREDIENTS FOR CHICKEN SALAD:
- A handful of carrots, shredded
- A handful of cabbage, shredded
- A handful of basil
- A handful of mint
- A handful of cilantro
- 1 cup of roasted chicken, shredded
- 1/2 cup of peanuts, unsalted
- 1/4 cup of scallions, sliced
INSTRUCTIONS FOR CHICKEN SALAD:
- Place all ingredients in individual containers and place in fridge for a quick salad on the go. Place dressing in a separate containers a dress when you’re ready to eat!
INGREDIENTS FOR THAI PEANUT DRESSING:
- 2 tablespoons of peanut butter
- 1 tablespoon of honey
- 1 tablespoons of ginger, grated
- 1 tablespoon of rice vinegar
- 1 tablespoon of lime juice
- 1 tablespoon of coconut aminos
- 1 teaspoon of sesame oil
- 1 teaspoon of garlic powder
- Salt and Pepper, to taste
INSTRUCTIONS FOR THAI PEANUT DRESSING:
- Place everything in a blender or food processor and blend until creamy
*if dressing becomes thick in the fridge, slowly add a bit of boiling water to thin it to desired consistency
