Feel-Good Thai Chicken Salad

INGREDIENTS FOR CHICKEN SALAD:

  • A handful of carrots, shredded
  • A handful of cabbage, shredded
  • A handful of basil
  • A handful of mint
  • A handful of cilantro
  • 1 cup of roasted chicken, shredded
  • 1/2 cup of peanuts, unsalted
  • 1/4 cup of scallions, sliced 

INSTRUCTIONS FOR CHICKEN SALAD:

  1. Place all ingredients in individual containers and place in fridge for a quick salad on the go. Place dressing in a separate containers a dress when you’re ready to eat! 

INGREDIENTS FOR THAI PEANUT DRESSING:

  • 2 tablespoons of peanut butter
  • 1 tablespoon of honey
  • 1 tablespoons of ginger, grated
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of lime juice
  • 1 tablespoon of coconut aminos
  • 1 teaspoon of sesame oil
  • 1 teaspoon of garlic powder
  • Salt and Pepper, to taste

INSTRUCTIONS FOR THAI PEANUT DRESSING:

  1. Place everything in a blender or food processor and blend until creamy

*if dressing becomes thick in the fridge, slowly add a bit of boiling water to thin it to desired consistency
