Citrus Berry Chia pudding

 

Serves 4

INGREDIENTS:

  • 2/3 cups chia seeds
  • 1/4 cup hemp seeds
  • 2 cans light coconut milk
  • 1 tsp. vanilla extract
  • 1 lemon, zested and juiced
  • Pinch sea salt
  • 2 cups organic berries, for serving

INSTRUCTIONS:

  1. Mix all ingredients, except berries, together in an airtight glass container.
  2. Let sit on the counter for 5 minutes and stir again before storing overnight in the refrigerator. Will keep for 5 days.
  3. To serve, top with fresh berries.
