Celery Root Hummus

Celery Root Hummus

Serves 4
Prep time 10 minutes
Cook time 20 minutes

Ingredients:

  • 1 celery root, peeled and cut into cubes
  • 2 tablespoons of tahini
  • 2 tablespoons of lemon juice
  • 1/4 cup of olive oil
  • 1 tablespoon of salt
  • 1/2 tablespoon of cumin

Instructions:

  1. Boil celery root in salted water for about 20 minutes or until tender
  2. In a food processor, blend until smooth
  3. Add all other ingredients and blend until mixed well
  4. Add water for a more creamy consistency if necessary
  5. Serve with crudit és or use as a dip with a protein
