Banana Scones

Banana Scones

Serves 6
Prep time 30 minutes
Cook time 15 minutes

Ingredients:

  • 1 cup of almond flour
  • 1/4 cup of coconut sugar
  • 2 teaspoons of baking powder
  • 1 packet of baking yeast
  • 2 eggs
  • 1 pinch of salt
  • 1/2 teaspoon of vanilla extract
  • 1 very ripe banana, mashed well
  • 2 tablespoons of coconut yogurt

Instructions:

  1. Preheat oven to 350
  2. Mix together all wet ingredients
  3. Add in all dry ingredients and mix well
  4. Let rest, covered, for 20 minutes
  5. Spoon 2 inch balls on a parchment paper lined tray and form a triangle with your spoon
  6. Bake for 15 minutes
