- 8 large golden delicious apples, peeled, cored and cut into thin slices
- 1 teaspoon of vanilla
- 1 teaspoon of ground cinnamon
- 2 tablespoons of maple syrup
- 1 tablespoon of lemon juice

- In a large bowl, mix all ingredients
Crumble:
Ingredients:
- 1/4 cup of buckwheat or chestnut flour
- 3 tablespoons of cold coconut oil
- 2 tablespoons of coconut sugar
- 2 teaspoons of cinnamon
- 1 teaspoon of ground ginger
- 1/4 cup of almonds
- 1/4 cup of macadamia nuts
- A pinch of salt
Instructions:
- In a food processor, place all ingredients and pulse until crumble is uniform and slightly chunky
- Keep cool until its ready to be used
Instructions:
- Preheat oven to 400 degrees
- Using coconut oil, grease a 9.5 inch pie dish on all sides
- Add apple filling and spread it evenly around dish
- Top with crumble, packing it tightly on the surface of apple filling
- Cover pie with aluminum foil and bake for 20 minutes
- Remove aluminum foil and bake for another 10 minutes or until crumble is golden
- *Top with coconut ice cream or coconut whipped cream if desired
