SWW® Apple Crumble

Serves 4-6

Cook time 40 minutes

Filling:

Ingredients:

  • 8 large golden delicious apples, peeled, cored and cut into thin slices
  • 1 teaspoon of vanilla
  • 1 teaspoon of ground cinnamon
  • 2 tablespoons of maple syrup
  • 1 tablespoon of lemon juice

Instructions:

  1. In a large bowl, mix all ingredients

Crumble:

Ingredients:

  • 1/4 cup of buckwheat or chestnut flour
  • 3 tablespoons of cold coconut oil
  • 2 tablespoons of coconut sugar
  • 2 teaspoons of cinnamon
  • 1 teaspoon of ground ginger
  • 1/4 cup of almonds
  • 1/4 cup of macadamia nuts
  • A pinch of salt

Instructions:

  1. In a food processor, place all ingredients and pulse until crumble is uniform and slightly chunky
  2. Keep cool until its ready to be used

Instructions:

  1. Preheat oven to 400 degrees
  2. Using coconut oil, grease a 9.5 inch pie dish on all sides
  3. Add apple filling and spread it evenly around dish
  4. Top with crumble, packing it tightly on the surface of apple filling
  5. Cover pie with aluminum foil and bake for 20 minutes
  6. Remove aluminum foil and bake for another 10 minutes or until crumble is golden
  7. *Top with coconut ice cream or coconut whipped cream if desired
