Ingredients
- 4 eggs
- 1 sweet green pepper, sliced thinly
- 1 onion, sliced
- 1 sweet potato, peeled and cubed
- 1 cup of cherry tomatoes
- 4 tablespoons of olive oil
- 1/2 cup of basil leaves, teared
- Salt and pepper to taste
Instructions
- In a skillet, add onion and olive oil
- Cook onion until caramelized, about 10 minutes
- Add pepper, sweet potato and cherry tomatoes
- Let veggies stew until sweet potato is cooked through
- Add basil
- Add salt and pepper to taste
- Gently crack eggs into sauce, leaving space between them and doing your best not to break them
- Cover and and cook eggs on low heat until done
- Salt and pepper to taste
