Ingredients:
2 cups of organic sweet mini peppers
4 organic sausages
2 tablespoons of chopped Italian parsley
Instructions:
- In a nonstick pan, cook peppers with 1/2 a cup of water, and salt to taste and cover
- When water has evaporated, add olive oil and cover until the peppers are cooked through
- Slice peppers thinly, length-wise, cleaning them of any seeds
- In a nonstick pan, place sausages with 1/2 a cup of water, covered
- When water has evaporated, slice sausages in halves on a bias
- Put sausages back in the pan with sliced peppers and finish cooking
- Toss with chopped parsley and serve
