Pineapple and Endive Salad

Pineapple and Endive Salad

Ingredients:

  • 1 pineapple 
  • 1 jalapeño, sliced thinly 
  • 4 tablespoons of extra virgin olive oil 
  • Fresh cracked pepper, to taste
  • Salt, to taste
  • 1 avocado, chopped 
  • 2 springs of cilantro 
  • 1 head of endive
  • The juice of 1/2 a lime 
Instructions:
  • Peel and core pineapple 
  • Slice into thin, 1/4 inch slices
  • Brush pineapple slices with 1 tablespoon of olive oil 
  • Grill on high heat until wilted and with char marks 
  • Lay on paper towel to soak up excess juice
  • Plate pineapple, endive leaves, avocado, jalapeño slices, cilantro, olive oil, lemon juice, salt and cracked pepper on a serving dish
