Ingredients:
- 1 pineapple
- 1 jalapeño, sliced thinly
- 4 tablespoons of extra virgin olive oil
- Fresh cracked pepper, to taste
- Salt, to taste
- 1 avocado, chopped
- 2 springs of cilantro
- 1 head of endive
- The juice of 1/2 a lime
- Peel and core pineapple
- Slice into thin, 1/4 inch slices
- Brush pineapple slices with 1 tablespoon of olive oil
- Grill on high heat until wilted and with char marks
- Lay on paper towel to soak up excess juice
- Plate pineapple, endive leaves, avocado, jalapeño slices, cilantro, olive oil, lemon juice, salt and cracked pepper on a serving dish
