These carrots are an absolute favorite. They're sweet and savory with that little extra something going on.
Honey & Thyme Roasted Carrots
2 pound carrots, preferably multi-colored, scrubbed well and cut into 3-inch chunks
2 tablespoons olive oil
1 tablespoon honey
2 tsp. whole coriander seeds, crushed
6-7 fresh thyme sprigs
fine sea salt
Preheat the oven to 400 degrees.
Line a baking sheet with parchment paper. In a bowl, toss carrots with the olive oil, honey, coriander seeds, thyme sprigs, and a generous pinch of salt (make sure the carrots are well coated).
Spread carrots mixture in an even layer on the baking sheet and roast in the oven until the edges are brown and caramelized, about 30-35 minutes.
Serve warm or at room temperature.
