Ingredients:
- 12 eggs
- 1 avocado, pitted and peeled
- 1 tablespoon of cilantro, chopped
- 12 slices of jalapeño
- The zest of 1 lime
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
- Bring a pot of water to a boil and gently place eggs into water
- Boil 8 minutes and peel
- Slice eggs in half and using a small spoon, remove the yolk
- Using a fork, smash yolk and avocado together until mixed well
- Place avocado mixture into a mixing bowl
- Add lime zest, olive oil, cilantro and salt and pepper
- Using a small spoon, fill eggs and top with jalapeño slice
