Almond butter keto bombs rolled in cashew crunch

Serves 6

Prep time: 10 minutes

Ingredients:

  • 1/2 cup of almond flour 
  • 1/2 cup of coconut flour 
  • 1 tablespoon of tapioca flour
  • 1/2 cup of almond butter 
  • 1 teaspoon of cinnamon
  • 3 drops of monk fruit sweetener 
  • A pinch of salt 
  • 1 teaspoon of vanilla extract  
  • 1/4 cup of sunflower seeds
  • 1/4 cup of flax seeds 
  • 1/2 cup of cashews, chopped ( for crunch)

Instructions:

  1. In a large mixing bowl, add all ingredients, except cashews, and mix well 
  2. Scoop out a spoon of dough and using hands form a 2 inch ball, continue until dough is finished
  3. Roll balls into cashew crunch and pushing slightly so the crunch stays firmly on keto bombs
  4. Store in an airtight container
