Roasted Mixed Squash with Quinoa Bread Crumbs and Tahini Basil Sauce

Serves 4
Prep time 10 minutes
Cook time 40 minutes

Ingredients:

  • 1 cup of quinoa, cooked
  • 2 lbs of squash *You can use all different types of squash for this (butternut, pumpkin, zucchini, yellow squash
  • Salt to taste

Instructions:

  • Preheat oven to 375 degrees
  • On a parchment paper lined baking sheet, spread out quinoa
  • Bake for 15 minutes or until crunchy
  • Peel, if you have chosen butternut or pumpkin, and cut into 1 inch cubes
  • Lay on a parchment paper lined tray and spread squash around
  • Salt lightly
  • In a preheated oven bake at 350 for 15 minutes or until cooked through
  • Place in a bowl and toss with quinoa
  • Dress with tahini basil sauce

Tahini basil sauce
1/4 cup of basil leaves
2 tablespoons of tahini
3 tablespoons of extra virgin olive oil
1/4 cup of warm water
2 tablespoons of lemon juice
1 teaspoon of honey
1/2 teaspoon of cayenne pepper
Salt TT

Instructions:

  • Put everything in a blender and blend until smooth
  • Add more warm water if necessary to achieve a creamy consistency
