Avocado Egg Sandwich

Avocado Egg Sandwich

Serves 6, makes 12

Cook time 10 minutes

Ingredients:

  • Avocado cooking spray oil
  • 12 eggs
  • 1 avocado, pitted, peeled and sliced
  • 1 red pepper, seeded and chopped
  • 1 onion, sliced

Instructions:

  1. Preheat oven to 350
  2. Spray muffin tins with avocado cooking spray
  3. In a large bowl, whisk eggs well
  4. Fill muffin tins half way up with scrambled eggs
  5. Distribute peppers and onions evenly amongst the tins
  6. Bake for 10 minutes
  7. Slice egg cup in half and fill with avocado slices
  8. *Keep in an airtight container for up to 4 days*
